Sample recipe: Dried Schnitz Pie

2 c. dried tart apples 1/4 t. powdered cloves
2/3 c. sugar 1/2 t. cinnamon
1 1/2 c. water Pastry for 2 (9-inch) crusts

Soak apples in 1 1/2 cups of warm water, then cook in the same water until soft. Rub apples through colander, and add sugar and spices. Put mixture in unbaked pie shell, and cover with top crust. Bake at 425 degrees for 15 minutes. Reduce temperature to 375 degrees and bake for 35 minutes more.


About the Compiler and Editor . . .

Mary Clemens Meyer grew up in Lansdale, Pennsylvania, the daughter of a Mennonite pastor. Meyer and her husband, Ron, live in eastern Ohio and have three children. She is editor of On the Line, a magazine for children ages 9 to 14. The idea for An Amish Kitchen and compiling the recipes was done with the cooperation of fiction author Carrie Bender.
